To cook white asparagus:
Peel the asparagus (1 kg, 4 persons) from the top to the base. Cut a couple cm off from the base. Boil 1litre of water with the peel, 2 teaspoons of salt, 2 teaspoons of sugar, one table spoon of butter, 1 table spoon of fresh lemon juice. Boil this for 10 minutes. Take out the peel and then you cook the asparagus in the broth from the peel for 5-7 minutes.
That is the recipe for asparagus and for the soup you save the broth and follow the recipe below.
1,5 liter soup
1 chopped shallot onion
20 g butter
4 tbsp flour
1 litre asparagus broth from above
½ cube of hen broth
200 ml dry with wine
200 ml cream
200 g of already cooked asparagus, chopped up.
Stir fry the onion in the butter. Powder the flour and stir. Add the asparagus broth while you stir with a whisk. Add the cube of hen broth, the wine and the cream and let it boil for 10 minutes. Mix the soup light and fluffy with a mixer and add, if you like, some bits of the asparagus from above. It is really tasty with some Parmesan on top as well.
