Quinoa sallad

300 ml red or black Quinoa

250 g green beans

1 red onion

4-5 big sun-dried tomatoes in oil

1 big carrot grated

1 nectarine or appleĀ 

1 package of feta cheese (200g)

french vinegar dressing (http://walktalkandeat.com/apps/recipe/details/id/French-vinegar-dressing)


Cook the quinoa according to the instructions on the bag.

Steam or cook the green beans for 2-3 minutes.

Chop the red onion and dice the nectarine or apple.

Stir it all together in a bowl and add the dressing to taste. Season with salt and pepper. Serve with the feta cheese on top.


Keeps well in the fridge for 2-3 days. Great to have in a lunch box.
