Tomato and lentil soup

1,5 litre soup


2 onions

2 cloves of garlic

1 tbsp of herbs de Provence

Olive oil

2 cans of chopped tomatoes

1 litre water

2 cubes of hen broth

2-3 tbsp of Ajvar Relish

200 ml of red lentils

250 ml cream


Stirfry onions, sliced cloves of garlic, herbs de Provence in some olive oil. Add tomatoes, water, cubes of hen broth, Ajvar relish and red lentils. Boil until the lentils are soft. Blend the soup with a hand blender and add 250 ml cream, salt and black pepper. Add more water if you want a more liquid soup.
