Chia Pancakes

Ingredients
  • 2 tablespoons chia seeds
  • 100 ml milk of choice (cow, almond, oat, soy)
  • small pinch of salt
  • small pinch of vanilla extract
  • 2 eggs
  • 50 ml almond flour (or quinoa flour, buckwheat flour)  
  • 1 tsp fiberhusk (psyllium fibre)
  • 1 tsp baking soda
  • coconut oil for frying 
Directions

Mix Chia seeds, milk, salt and vanilla in a bowl (stir well so that the seeds are not at the surface) and put in the fridge for a few hours or overnight. Add the eggs, almond flour, baking soda and fibre husk and whip to a smooth consistency. Put aside for 10 minutes and then fry small pancakes (10 cm) for a few minutes on each side in the coconut oil. 

Serve with, for example, berries, coconut flakes and almond butter.
