Ingredients
Dough
- 500 g broccoli
- 150 ml flour (Brown rice, Quinoa, Buckwheat, Teff, Amaranth)
- 200 ml grated parmesan cheese
- 4 eggs
- 1/2 tsp salt
Tomato sauce
- 8 tablespoons tomato paste
- 1,5 tsp honey
- 2 cloves garlic, pressed
- salt, pepper and oregano to taste
Suggestions for topping
Cabbage, leek, mushrooms, onions, fennel, dried tomatoes, rocket salad, mozzarella cheese, parmesan cheese, feta cheese, parma ham
Directions
The dough
Put the oven to 200 degrees Celsius. Cut the Broccoli into small pieces that you add to a food processor and blend to a “broccoli rice). Grate the parmesan and mix with the broccoli, flour, salt and eggs.
On a baking sheet with baking paper spread the dough out one big square covering the whole sheet. use your hands to get it thin and flat. Put the sheet in the middle of the oven for 10-15 minutes.
The Toppings
Meanwhile fry the topping ingredients that need a bit of heat (cabbage, leeks, fennel mushrooms, onions).
When the base of the pizzas are ready let them cool off a bit and spread the tomato sauce evenly over the dough. Add the chosen topping ingredients and finish with mozzarella if you like. Bake the Pizzas for another 15-20 minutes or until they look ready.
Add Rocket salad, Parma ham or fresh herbs when serving.
