Beetroot patties

Ingredients
  • 1 kg beetroots peeled and roughly grated 
  • 2 yellow onions, finely chopped
  • 3 boiled cold potatoes, mashed
  • 2 eggs
  • 2 table spoons of Dijon mustard
  • 4 table spoons of capers
  • Butter/oil to fry in
  • salt and pepper
Directions

Mix, beetroots, potatoes, onions, eggs, mustard, and capers in a bowl. Season with salt and pepper. 

Make patties with your hands and fry them in a pan with butter or olive oil to a golden color. 

Notes: Nice to serve with Cauliflower Tabbouleh and Turkish or Greek yogurt.
