Gluten free flower power pizza

Ingredients

The Pizza base:

  • 140 cauliflower
  • 1 egg white, beaten
  • 50 g ground almonds
  • 40 g buckwheat flour
  • 1/2 tsp sea salt
  • 1/2 tsp black pepper
  • 1/4 Tsp bicarbonate of soda

Tomato sauce:

  • 3 garlic cloves, minced or diced
  • 1 tbsp butter or ghee
  • 12 large tomatoes roughly chopped
  • 2 tsp dried oregano or 1 tbsp fresh oregano leaves
  • sea salt and black pepper.
  • fresh or dried chili (optional)
Directions

Preheat the oven to fan 190 °c. Line a baking tray with parchment paper and lightly grease with butter or ghee.

Tomato sauce:

Gently melt the butter in a pan over medium heat and fry the garlic for a minute. then add the chopped tomatoes, oregano, salt, pepper, and a little chili if you like. Cook the tomatoes down to a thick sauce over medium heat, lid off, about 15 minutes. Then mash the tomatoes with a spatula or use a blender if you like the sauce less rustic.

Pizza base:

While the sauce is cooking grate the cauliflower into rice-size pieces with a hand grater or in a food processor. Add the rest of the pizza base ingredients and blend into a sticky dough. Spread the dough with the back of a spoon on the baking try shaping it into a diameter of 30 cm or whatever form you prefer. Bake in the oven for about 20 minutes., flipping it over after 15 minutes to cook on the underside. Choose your pizza topping and cook as instructed.

Choose your favorite toppings or pick from these suggestions:

Tomato mozzarella topping: Tomatoes, Mozzarella, Chili flakes

Cover the base with the tomato sauce and then the topping and bake for 10-15 minutes in the oven.

Parma ham and Rocket topping: Parma ham, Rocket sallad, Shavings of Parmesan cheese

Add the warm tomatoes sauce on the finished base and then top with parma ham, rocket sallad and shavings of parmesan when serving.
