For this recipe, you need a mandolin to slice the kohlrabi in very thin slices to get the carpaccio sensation.

Ingredients
- 2 medium kohlrabi
- Grated Parmesan to taste
- 100 ml pine nuts or walnuts
- extra virgin olive oil
- red wine balsam vinegar or lemon juice
- rocket sallad
- salt pepper
Directions
Roast the pine nuts in a pan until golden on low heat.
Slice, with a mandolin, the kohlrabis as thinly as possible. Spread them out on a big plate or dish. Top with olive oil, balsam vinegar/lemon juice, roasted pine nuts/walnuts, parmesan, salt and pepper. Serve with some rocket salad.
