Ingredients
Salmon Patties
- 400 g salmon
- 1/2 red pepper
- 150 g spring onions or leek
- 1 egg
- 1 tsp salt
- 1 tsp koriander
- 1 tsp turmeric
- small piece of fresh chili
- 2 cm of fresh ginger, grated
Creme fraiche sauce
- 200 ml creme fraiche
- juice and zest of 1 lime
- fraiche cilantro/coriandre
- 1/2 tsp honey
Directions
Salmon Patties:
Chop the salmon or pulse it in a food processor until small chunks. Put in a mixing bowl, chop or pulse in a food processor, or use a hand blender to the onions/leeks and red peppers to a fine consistency. Put in a mixing bowl, add spices and egg, and stir. Form small patties (50 ml per pattie) and fry in a saucepan for 3 minutes on each side.
Creme fraiche sauce:
In a bowl, mix creme fraiche, lime juice and zest, cilantro, and honey.
Serve with brown or black rice, quinoa or potatoes.
If you do to many, they keep well in the freezer to have at hand whenever needed. They are great in a lunch box!
