Yields
4 people, 20 patties
Ingredients
- 2 zucchini, roughly grated
- 1 small yellow onion finely chopped
- 1 clove garlic minced
- 100 g cheese of choice, Chèvre, Mozzarella, Cheddar, Gruyere
- 2 eggs
- 100 ml buckwheat boiled or soaked overnight
- 4 table spoons of Buckwheat flour
- 1 big bunch of chives or other fresh herb, chopped
- olive oil or butter to fry in
- salt and pepper
Directions
Put the grated zucchini in a strainer add some salt and let it be for 10 minutes, then press the zucchini to get some of the liquid out. in a bowl, add the zucchini, onion, garlic, cheese, eggs, buckwheat, flour, and chives. add salt and pepper to taste. Take a spoon full of the batter in a frying pan with butter or oil and fry the patties until golden colored. Press them a little and don’t make them too big, one spoonful of batter = 1 pattie. Serve the patties as they get ready.
Notes
Works well to make in advance, keep in the fridge, and then heat for 10 minutes in the oven at 200 degrees before serving.
