Lemon mango power balls

Ingredients
  • 200 ml almond
  • 100 g dried mango or apricot, soaked for 30 minutes
  • 2 tsp lemon juice
  • lemon zest from ½ lemon
  • ½ tsp dried ginger powder
  • 100 ml grated coconut
  • 2 table spoons grated fresh ginger
  • 1/2 teaspoon salt

Directions

Add the almonds to a blender to a fine consistency but not powder. Press the soaked dried fruit in your hand and add to the blender together with the other ingredients apart from 50 grams of the grated coconut. Blend to a dough and put in the fridge for at least an hour. Make small balls and roll them in the grated coconut.

Notes: You can serve them without the Coconut on top(for the beautiful yellow color) or mix the coconut with licorice powder for a Scandinavian touch.
