Oats & banana energy cookie

Ingredients
  • 3 very ripe bananas
  • 1 tsp vanilla edxtract
  • 75 g chopped dried fruits for example, dates, apples, cranberries, apricots
  • 200 g rolled oats
  • 50 g dark chocolate (70 %)
  • chopped 20 g walnuts, crushed
  • 50 ml coconut oil
  • 100 ml sunflower seeds
  • 50 ml flax seeds
  • a couple of pinches of salt

Directions

Preheat the oven to 175 Celsius, and mash the bananas until liquid (great to run in a food processor). Add in all the other ingredients and use a spoon to place the ” cookie dough” on a baking sheet press them a bit to make them flat. Cook in the oven for around 15 minutes (depending on the size of the cookies) to golden brown.

Notes. A great energy kick when out in the mountains with only bananas and a little bit of dried fruit (that you can skip) as a sweetener. Also great for people with nut allergies who want a healthy energy bite.
