To cook white asparagus: Peel the asparagus (1 kg, 4 persons) from the top to the base. Cut a couple cm off from the base. Boil 1 liter of water with the peel, 2 teaspoons of salt, 2 teaspoons of sugar, 1 tablespoon of butter, and 1 tablespoon of fresh lemon juice. Boil this for 10 minutes. Take out the peel and then cook the asparagus in the broth from the peel for 5-7 minutes.
That is the recipe for asparagus and for the soup you save the broth and follow the recipe below.

Ingredients
- 1 chopped shallot onion
- 20 g butter
- 4 tbsp flour
- 1 litre asparagus broth from above
- ½ cube of hen broth
- 200 ml dry with wine
- 200 ml cream
- 200 g of already cooked asparagus, chopped up.
Directions
Stir fry the onion in the butter. Powder the flour and stir. Add the asparagus broth while you stir with a whisk. Add the cube of hen broth, the wine, and the cream, and let it boil for 10 minutes. Mix the soup light and fluffy with a mixer and add, if you like, some bits of the asparagus from above. It is really tasty with some Parmesan on top as well.
