Ingredients
- 300 ml red or black Quinoa
- 250 g green beans
- 1 red onion
- 4-5 big sun-dried tomatoes in oil
- 1 big carrot grated
- 1 nectarine or apple
- 1 package of feta cheese (200g)
- French vinegar dressing
Directions
Cook the quinoa according to the instructions on the bag. Steam or cook the green beans for 2-3 minutes. Chop the red onion and dice the nectarine or apple. Stir it all together in a bowl and add the dressing to taste. Season with salt and pepper. Serve with the feta cheese on top.
Notes: Keeps well in the fridge for 2-3 days. Great to have in a lunch box.
