Quinoa sallad

Ingredients
  • 300 ml red or black Quinoa
  • 250 g green beans
  • 1 red onion
  • 4-5 big sun-dried tomatoes in oil
  • 1 big carrot grated
  • 1 nectarine or apple 
  • 1 package of feta cheese (200g)
  • French vinegar dressing

Directions

Cook the quinoa according to the instructions on the bag. Steam or cook the green beans for 2-3 minutes. Chop the red onion and dice the nectarine or apple. Stir it all together in a bowl and add the dressing to taste. Season with salt and pepper. Serve with the feta cheese on top.

Notes: Keeps well in the fridge for 2-3 days. Great to have in a lunch box.
