Green pea & mint soup

Ingredients
  • 1 yellow onion, chopped
  • 1 clove of garlic, chopped
  • 600 ml vegetable broth
  • 500 g frozen green peas
  • juice from 1/2 a lemon
  • 50 ml cream (optional)
  • a handfull of fresh mint leaves
  • oil or butter to sauté the onion
  • salt and black pepper

Directions

Add the chopped onion and garlic to a pan with oil or butter and sauté on medium heat until soft but not brown.

Add the vegetable broth and heat up, add the peas, lemon juice, and cream (if using). After a few minutes when the peas are warm turn off the heat add the mint and blend to a smooth soup with a hand blender. Add water to the consistency you like and more lemon juice if required.
