Ingredients
- 500-gram Jerusalem artichoke
- 3 potatoes
- 1 onion
- 1,5 litre vegetable broth
- 200 ml creme fraiche
- salt and black pepper
Directions
Peel and slice onion, jerusalem artichokes, potatoes and stir fry in oil. Add the broth and boil until the ingredients are soft. Blend with a hand blender and add crème fraiche salt and pepper. Great to serve with some parmesan on top.
