Ingredients
- 400 ml almonds or pumpkin seeds
- 100 ml grated coconut
- 15 dates
- 100 ml cocoa nibs
- 200 ml cocoa powder
- 1-2 table spoons honey
- 2 table spoons coconut oil
- 1 tea spoon vanilla powder
- 1 tea spoon quality salt
- 1 tsp lemon juice
- 2 table spoons grated fresh ginger
- add water if needed for consistency
Directions
Put all the ingredients in a food processor and blend until you have a dough that is easy to roll into 20 balls. Add water if the blend is too dry to roll into balls.
Put them in the fridge.
Notes: these energy balls keep very well in the freezer.
