Energy ball with ginger and cocoa

makes 20 balls

Ingredients
  • 400 ml almonds or pumpkin seeds
  • 100 ml grated coconut 
  • 15 dates
  • 100 ml cocoa nibs
  • 200 ml cocoa powder
  • 1-2 table spoons honey
  • 2 table spoons coconut oil
  • 1 tea spoon vanilla powder
  • 1 tea spoon quality salt
  • 1 tsp lemon juice
  • 2 table spoons grated fresh ginger
  • add water if needed for consistency

Directions

Put all the ingredients in a food processor and blend until you have a dough that is easy to roll into 20 balls. Add water if the blend is too dry to roll into balls.

Put them in the fridge. 

Notes: these energy balls keep very well in the freezer.
